Mercurey Chamirey is a charming, demonstrative wine bursting with aromas of cherries, berries and spices. Leaf-thinning and multiple passes through the vineyards have brought higher phenolic maturity and greater purity.
Vaillons is a bit more powerful and structured, but Dauvissat's classic take has plenty of saline minerals and crisp acidity too. Soft touch of oak here buttresses the structure. Profound, and built to age.
This vineyard is located north of the village of Meursault on the way to Volnay; Surprisingly round, with an enchanting mix of spice and mint to the nose!
Excellent medium deep purple with a pinkish tinge. The aromatics are beautiful here, with a depth of flavour unusual in Hautes Côtes. Dark raspberry with fresher notes, loganberry perhaps, good grip behind and fair length. Well done.
This Chablis reveals white fruit notes such as peach, and has a persistent mineral structure. In the mouth, a stony sensation which is so typical of Chablis makes this a round and pure wine.
The nose had wild flowers, peach, yellow pear, and golden apples. The mouthfeel was elegant, exhibiting notes of vanilla créme, white peach, chalk mineral, and a light touch of hazelnut to the refreshing finish.
